In addition to the references already mentioned:

Biham and Shamir published a book on their _Differential Cryptanalysis of the Data
Encryption Standard_,
although I'm not sure whether it's appropriate for "beginners". I haven't had a
look at it.

Bauer's book _Decrypted Secrets_ is divided into "Cryptography" and "Cryptanalysis"
parts, each about
200 pages long. It concentrates on classical techniques, although there is some
coverage of late-20th-
century crypto. It also seems to be relatively cheap, in case that's an issue. (I
bought mine at the U.Penn.
bookstore last year for US$39.95)
